Spinach with Truffle Oil Dressing

Ingredients
- baby spinach, stemmed, bite size pieces
- basil leaves, stemmed, bite size pieces
- red onion slices
- 2 T white truffle oil
- 1 1/2 T olive oil
- 1 T champagne wine vinegar
- 1/4 t lemon juice
Instructions
- Whisk together the truffle oil, olive oil, vinegar, and lemon juice, then season to taste.
- Toss the spinach, basil, and red onion in the dressing.
- Plate and serve.
